4. Water gently and keep the surface lightly moist during germination.
5. Thin the seedlings after they develop true leaves, using the final spacing suited to the planned harvest size.

Harvest Style

For baby leaves, begin picking when the plants have developed several healthy leaves and reached a useful eating size. Scissors make it easier to take a clean group of leaves from closely planted rows.

Head-forming Lettuce, Chinese Cabbage and Cabbage need more time and space. Their outer leaves can be collected as the plant develops, or the complete head can be harvested after it becomes firm and reaches the preferred size.

Pick Coriander, Parsley and Dill by taking the outer stems first. This leaves the central growth in place for future picking.

Celery leaves can be collected for flavour while the stalks continue developing. Spearmint responds well to regular cutting and produces fresh shoots from the remaining stems.
